Creamy Tomato and Spinach Pasta with Grilled Chicken on What's for Dinner Wednesday

I was shopping at Aldi the other day and they had chicken on sale for $1.93 a lb!  Naturally, I wanted to stock up and I bought 4 packages.  So we'll be having chicken for a while, but it's lean and healthy so can't hurt right!

I found a recipe for this tomato & spinach pasta and decided to add grilled chicken to it.  I have a bad habit of forgetting to take photos until the end, but this was too good not to share!  Here's the recipe with my lone photo.


In total I spent $1,93 on the chicken, $0.49 for diced tomatoes, and $1.99 for spinach.  A meal for under $5 since I had the rest of the ingredients already in my kitchen.

Ingredients
1 lb chicken
1 TBSP olive oil
1 small onion, diced
2 cloves garlic (I used my minced garlic from the fridge)
1 can diced tomatoes
1/2 tsp oregano
1/2 tsp basil
pinch red pepper flakes
1/2 tsp salt
1/2 tsp pepper
2 TBSP tomato paste (I opened up the fridge and mine was molding so I made some with tomato sauce - see how here)
2 oz cream cheese
1/4 cup grated parmesan
1/2 lb tomato flavored pasta (I had some birds nests from a sale at Aldi a few weeks back)
1 bag fresh spinach

Directions:
Pre-heat your grill to medium-high.  Add chicken and cook until a bit charred and no longer pink  in the center.  I completely forgot to season mine with anything but it ended up being fine since the pasta is so flavorful!
While grilling, boil pasta until tender (7-10 minutes) and start on the sauce.  
For the sauce, add diced onion and garlic to olive oil and heat on medium-high for 5 minutes.
Turn your chicken on the grill if you haven't yet.
Add the entire can of diced tomatoes, oregano, basil, red pepper, salt, pepper and stir to combine. Add the tomato paste and 1/2 cup of water, stirring until the paste is dissolved.
Turn the heat down to low and add the cream cheese, stirring until it's fully melted.
Add half the Parmesan, doing the same and finally the last bit of Parmesan.
Turn your chicken on the grill again and check your pasta - if it's ready, drain it.
Add the spinach and stir until it's wilted, about 3-5 minutes.
Add the pasta and stir until all ingredients are mixed well.
Pull the chicken off the grill and slice, serving on top of the pasta.
