Orange Chicken & Sesame Asparagus on What's for Dinner Wednesday

I've decided to dedicate every other Wednesday to an affordable menu idea so today will be the first!  Being a busy mom, running a small business, working at a larger one, and taking care of a baby I have to get creative with easy affordable meals for dinner.  Tonite's dinner cost $7.98 for 2 - and was absolutely delicious!  Find all information below:
Orange Chicken (frozen meal) from Aldi - only $6.99 (price will vary by store)!  Compared to regular mass retailers that's a great deal.
Asparagus (frozen package) from Aldi for $1.99
The asparagus recipe I used is below - originally found here, with a couple adjustments for mine based on what I had in my kitchen:


  • 1 package frozen asparagus (12 oz)
  • 1/2 TBS cornstarch
  • 2 and 1/2 TBS soy sauce
  • 1 tsp olive oil
  • 1 TBS minced garlic
  • 3/4 tsp ginger powder
  • 1 1/2 TBS HONEY
  • 1 tsp vanilla extract
  • 1/4 tsp red pepper flakes
  • 1 tsp sesame oil
  • 1/2 TBS toasted sesame seeds


Steam asparagus in microwave as per instructions on bag.  Set aside.

In a small bowl mix together corn starch and 1/2 TBS soy sauce.  Set aside.  

In a large skillet, mix oil, ginger, garlic and cook on medium high for 1 minute.  Add the rest of the soy sauce, honey, red pepper flakes, oil, vanilla and stir.  Bring to low heat for 10 minutes, stirring occasionally.  

While sauce is cooking, put sesame seeds in toaster oven at 325 degrees for 5 minutes.  Monitor while cooking to ensure they don't burn.  Pull out once browned and fragrant.  

After time, add asparagus and pour cornstarch mix on top.  Stir well.  Once asparagus is heated transfer to plate and pour remaining glaze on top.  Sprinkle toasted sesame seeds.

Add your chicken (cooked per specifications on bag), add glaze and serve warm.  I also recommend doing milk for beverage because this is a pretty spicy meal.

Tada!  Dinner in 25 minutes.  Enjoy!
